For Pastry
Like all good pastries, we believe that this Lemon Meringue French Toast is not only eye-catching in its presentation, but tastes like a happy celebration. This delectable recipe comprises of zesty lemon curd, a fluffy Swiss meringue, and a sweet French toast. Our Rich’s family makes our toasts like celebrations when all the family gathers to eat and drink. It is simple, yet delicious. Much of the flavor comes from our Rich’s Double Cream that makes the lemon curd a wonderful creaminess!
Lemon Meringue French Toast

[A] Lemon Curd
- Fresh Lemon (Zest & Juice) – 2 nos
- Whole Egg – 195gm
- Egg Yolk – 135gm
- Sugar – 70gm
- Rich’s Double Cream – 150gm
- Butter – 60gm
In a pot, add in all the Lemon Curd ingredients except butter and cook over low heat until it thickens. Then only emulsify the butter in and let it cool slightly.
[B] Swiss Meringue
- Egg White – 120gm
- Sugar – 300gm
Over a bain-marie, combine both egg white and sugar; whisk consistently until sugar is dissolved. Then transfer mixture to a mixer and whip until glossy peaks are formed.
[C] French Toast
- Sandwich Slice – 4 pcs
- Rich’s French Toast Topping – 200gm
Remove the crust of the sandwich slices and cut them into strips. Dip both sandwich slice surfaces with Rich’s French Toast Topping. Bake in the oven at 150°C for 13 to 15 minutes, or until golden brown.
To assemble the Lemon Meringue French Toast, you will need:
- Lemon Curd [Recipe A] – 30gm
- Swiss Meringue [Recipe B] – 30gm
- French Toast [Recipe C] – 2pcs
- Strawberries (Sliced) – 10gm
- Mint Leaves – 2gm
- Blueberries – 20gm
This is also the time to grab your fanciest-looking plate for that insta-worthy shot by the way. But first, sandwich a layer of lemon curd between your two layers of French toast. Then top them off with the lovely Swiss meringue and torch the meringue until it has a nice golden-brown top. Then you are free to decorate the dessert with sliced strawberries, mint leaves, and blueberries—whatever suits your fancy.
This Lemon Meringue French Toast recipe is worth every minute. The filling is rich and flavorful, and the French toast is light and crispy. None of the steps in this recipe are difficult and anyone can easily make it.

Pulut Panggang literally translates to ‘grilled glutinous rice’. The rich and aromatic glutinous rice rolls are filled with beef floss and then wrapped in banana leaves, then grilled to perfection.
