Many recipes call for a few tablespoons of heavy cream but leave you stuck feeling overwhelmed. Here's how you can use Rich’s Double Cream for easy culinary recipes for double the creaminess, double the deliciousness.
In general, what is a Double Cream?
The British people coined the term ‘double cream’ for heavy cream or whipping cream. Unsurprisingly so, a double cream is in fact a little thicker than the regular whipping cream. Because it is so rich too, it can be easy to overwhip it and for it to get too thick if you are not paying full attention to it while whipping.
Since double cream can be easily whipped, it makes it a popular cream for both pastry and culinary cooks who often incorporate whipped or heavy creams into their craft. The reason why a double cream makes an ideal cream is that it is versatile. Serve it with fruits, or have it whipped and piped for dessert decorations. Or even use it to add richness and creaminess to otherwise overpowering savory dishes. An extra thick double cream is usually made by heating it up, then rapidly cooling the double cream.
A double cream can also be flavored and used to make a Crème Diplomat (crème patissiere or custard lightened with whipped cream). and other custards you can imagine. Due to its high butterfat content, it makes a custard taste richer giving you a greater feeling of satisfaction. Adding double cream into sauces and soups too, helps to give more depth and body to them making the overall experience more decadent and luxurious.

Rendang Meatball Sandwich
As Malaysians, we are fortunate to be living in a multiracial Asian country with a huge population of Chinese, Indian, Malay, and others. And if there is one thing that we all can agree on, it is a tasty dish of rendang. Plus, did you know that CNN scoured the planet to create the list of 50 most delicious foods in 2011, and rendang took the top position on the list? If you did not, that is something you can think about now.
So, what we have here for you is something substantial. You can even eat it while you are on the go because it is a sandwich. This Rendang Meatball Sandwich not only tastes good because of its homemade meatballs, it just has so much body and flavor because Rich’s Double Cream is used in preparing the minced meatballs and also the rendang sauce. Adding Rich’s Double Cream to the minced meat actually helps to tenderise the meat while adding it into the rendang makes it richer and fulfilling.
Others have tried Rich’s Double Cream, and they love it!
In a collaboration we had with The Foodie Hub in August, their cheerful and bubbly Chef Qistina prepared a comfort Malaysian tea-time snack, which is the Pulut Panggang. According to Chef Qistina herself, some locals even have them for breakfast too alongside their teh tarik!
Pulut Panggang literally translates to ‘grilled glutinous rice’. The rich and aromatic glutinous rice rolls are filled with beef floss and then wrapped in banana leaves, then grilled to perfection. The grilling process helps to impart that nice aroma from the banana leaves. Rich’s Double Cream is added into the process of making the glutinous rice to make it more scrumptious. Such a complex aroma and taste in a good way!
With this simple recipe and only just a few ingredients, now you can make this popular Pulut Panggang at home or any gathering that calls for good food! Or if you like, you can always follow along with Chef Qistina’s footsteps (and jokes) in the livestream and learn from her!
