See, what we are looking for in a decent cupcake is the fluffiness and moistness it carries. It must have the right bounce to it too (try pressing it a little and see if it bounces back into its shape, quite fun). You most certainly do not want to bite into a cry cupcake because that is not just how it works! Do not worry too, because the best kind of cupcakes do not mean you have to know some magic trick. You just need… a few practical tricks, that is all!
How to have moist cupcakes

Tell me how many times you have come across a cupcake (or any cake) recipe that calls for butter? Plenty, I bet. But what if I told you that is not what you would want for your cupcakes? Hold up and wait for it… Do not use that butter. Before you roll your eyes and start questioning, hear me out first when I say you should use vegetable oil instead of butter.
Now if your recipe states that you should use butter, I still insist on going for the vegetable oil. Now I know very well that butter has its beauty in the world of baking. It is a staple ingredient, and I am not going to argue about that (what kind of human does not like butter anyway?). It is such a delicious kind of fact to be incorporated in the baking process. But it is also comprised partially of water. What that means is the butter we often use has slightly less fat than oil which is 100% pure fat. And when add that pure fat into baking our cupcakes, what it does is prevent gluten from building in your cupcakes.
What happens when the gluten builds?
When gluten builds in our cupcakes, that means it becomes hard for gluten chains to bond. Having less gluten bonds gives us a softer and moister cupcake! Hooray!
But wait, there is more!
You did not think I was done, right? Right. If you are not so into the whole vegetable oil idea, that is completely fine. I respect that. Remember, there are always alternatives in life—that includes the kitchen experiments too. The next trick would be…
Use syrup!
Sweet and sticky, yum- what is not to love? Now I am not going to request you to use a store-bought syrup (though it is fine if you already have one) but if you do not, it is easy to make your own syrup. And in just a few minutes too! It is not rocket science. All you need is just two ingredients—water and sugar. You can easily make a simple syrup by boiling equal parts of sugar and water. When it reaches a consistency you like, be sure to give a quick taste before you decide it is right. The sweetness depends on your personal preference.
Once that the syrup is made, get yourself a pastry brush. Use it to coat your cupcakes on the top, adding a little at a time so it gives time for the cupcakes to absorb the syrup. Do not flood it all at once, because remember, we are taking our time here so we can get lovely and moist cupcakes. Or you can also use a squeeze bottle if brushing is not your fancy. Get a small squeeze bottle, fill it with the syrup, and squeeze the syrup into the cupcakes directly.
Both methods will ensure your dry cupcakes to become moist instantly! Not only does it help keep your cupcakes moist, but it also helps to add sweet flavor which is always good!
